2 quart cold water
0.5 tsp salt
2 tbsp distilled white vinegar
2 tbsp sesame oil
1 tbsp sugar
1 pinch salt
1 pinch black pepper
1 tbsp sesame seeds , roasted
1 lb Sprouts, mung bean, mature, fresh , rinsed

1 In medium pan, boil 2 quarts of water.
2 Add sprouts and salt to pan. Cook 4 to 5 minutes until sprouts are tender-crisp.
3 Strain and transfer to serving bowl.
4 In small bowl, whisk vinegar, sesame oil, sugar, salt, and pepper.
5 Pour dressing on top of sprouts. Toss well
6 Just before serving, top with sesame seeds. Serve at room temperature or chilled.
